I used this recipe from Ambitious Kitchen https://www.ambitiouskitchen.com/chickpea-flour-chocolate-chip-cookies/. They might be the BEST chocolate chip cookies I’ve ever had in my life. And, because they’re made with chickpea flour, they are very filling.

I used the “flax egg” as she recommended it and Trader Joe’s Dairy Free Chocolate Chips, so these cookies were vegan in addition to gluten free.
